I thought it would be prudent to share an easy breakfast that would be great for Mother’s Day, yep Mother’s Day is just a little over 2 weeks away. So whether it’s just you and your immediate family or a big family get together brunch I’m here to help. I am a big fan of french toast! Growing up if we went out to eat it was usually to IHOP and I loved to get the french toast combo with strawberries, or the rooty tooty fresh and fruity with strawberries, perhaps what I really like was just the strawberry topping. Note to self, make more strawberry topping!
Making french toast for a lot of big eaters like my family can be kind of time consuming so I’ve really jumped on board the baked french toast. And since my husband is not a big fan of french toast I can still make it and enjoy it and have time to do the other stuff he likes. Although, he has admitted that he really likes coconut bread french toast made with my coconut bread, but only because it tastes like coconut bread. Oh well, you can’t win them all.
There are lots of great variations out there but I like this one because of the apples. It makes it feel just a little bit fancier which is perfect for Mother’s Day. Serve it up with sorbian eggs or quiche and some fruit on the side and you have an easy and substantial breakfast that can be made ahead of time. So if you are like me and end up making your own Mother’s day breakfast you don’t have to do anything the day of other than have your hubby (or whoever) heat up the oven and throw everything in. A win, win for everyone!
