Pumpkin Sausage Penne Pasta

Creamy Pumpkin Sausage Penne Pasta is an easy 30 minute recipe that brings the flavors of fall to the kitchen table with pumpkin puree and ground sausage.

I love really simple recipes like this one. Other than cooking the pasta it’s a one pot dish with simple ingredients I basically always have on hand.

Choosing to pair the pumpkin with a cream sauce is a match made in heaven. The flavors are rich without being heavy by choosing to sub traditional heavy cream with almond milk and adding a hearty dose of Parmesan cheese.

Ingredients:

  • penne pasta
  • olive oil
  • ground Italian sausage
  • green bell pepper
  • red bell pepper
  • onion
  • garlic cloves
  • dried rosemary
  • pumpkin puree
  • almond milk
  • Parmesan cheese grated

Substitutions

Instead of almond milk you can use whole milk, half and half, or coconut milk.

If you don’t have Italian sausage you can do what I did with the Italian Sausage Sandwiches and season them yourself!

Adding sausage and veggies to the pasta helps to round out the meal and make it more substantial than just the pasta and pumpkin cream sauce would be.

How to make pumpkin penne with sausage?

  1. Cook pasta according to package directions.  When pasta is done, drain well.
  2. Meanwhile, add olive oil and peppers, onion, rosemary, and garlic to a large pan over medium high heat.  As veggies begins to soften, about 2-3 minutes, add the sausage.  
  3. Continue cooking until sausage is no longer pink and vegetables have softened about 4-5 minutes.
  4. Add pumpkin puree, milk, and cheese.  Simmer sauce over medium-low heat until sauce is heated through about 3-4 minutes.  Season to taste with salt and pepper.
  5. Add pasta to sauce and toss to coat.

Ingredients

  • 16 oz penne pasta

Sausage and Veggies

  • 1 Tbsp olive oil
  • 1 lb ground sausage
  • 1 green pepper diced

  • 15 oz pumpkin puree
  • 1 cup almond milk or whole milk, half and half, or coconut milk
  • 1/2 cup Parmesan cheese grated
