Strawberry Cream Cheese Brownies

What do you get when you top brownies with cream cheese frosting and strawberry jam? An easy dessert for kids to make that can be made with homemade or boxed mix brownies.

There is nothing wrong with using box mixes as a base for desserts- like these Red Velvet cake mix cookies or White chocolate chip peanut butter bars. It’s a fantastic starting point when baking with children because it cuts down on the number of ingredients that I have to measure and they are pretty foolproof.

This recipe is an easy way to dress up a plain box of brownies and make it something “special”. I also love that it is a pretty easy last minute dessert. I usually have a box of brownies in the pantry and jam in my fridge. Also, I often have a container of cream cheese frosting just in case which means it’s a cinch to whip up.

Ingredients

  • one batch prepared brownies
  • strawberry jam, see other variations below
  • Cream Cheese Frosting
    • cream cheese
    • butter
    • powdered sugar
    • vanilla

Substitutions

Don’t want to make frosting from scratch? Use a can of cream cheese frosting.

Instead of strawberry jam, you could use the strawberry sauce from these strawberry crumble bars. Yum!

If you are really pressed for time, pick up prepared brownies from the bakery section of your local grocer.

How to make this

  • Prepare brownies according to recipe directions or make homemade brownies.
  • Meanwhile, prepare cream cheese frosting. In a large mixing bowl beat cream cheese, butter, and vanilla with an electric mixer on medium speed until light and fluffy. Gradually beat in powdered sugar to reach spreading consistency.
  • When brownie is cool spread frosting over brownies and place in freezer for a few minutes. 
  • Spread jam over frosting and place in freezer again for a few minutes until it sets.
  • To serve, remove from fridge, cut into squares, and wait about 10 minutes before you plan on serving to let the brownies warm up a bit.

If strawberry isn’t your thing there are lots of other ways to make this. Try this topped with:

  • raspberry jam
  • blackberry jam
  • salted caramel
  • butterscotch syrup

You can also top the cream cheese frosting with sliced fresh strawberries for a lower sugar option. Really any fresh berry like blueberries or raspberries would work.

Ingredients

Brownies:

  • 1 batch brownies , prepared
  • 1/2 cup strawberry jam

Cream Cheese Frosting

  • 8 oz cream cheese , softened
  • 1/2 cup butter , softened
  • 2 tsp vanilla
  • 5 1/2 cups powdered sugar

  • Meanwhile, prepare cream cheese frosting.
  • In a large mixing bowl beat cream cheese, butter, and vanilla with an electric mixer on medium speed until light and fluffy.

  • Once brownies have cooled, spread cream cheese frosting over brownies and place in freezer for a few minutes until it sets.
