Sour Cream Apple Triple Berry Pie with Oatmeal Crumble Topping

This Sour Cream Apple Triple Berry Pie is a delicious twist on a classic apple pie. With an oatmeal crumble topping, apples, and frozen berries combined for a flavorful dessert perfect for the holidays like Thanksgiving or Christmas.

One day I made the mistake of telling my hubby that I was going to make an apple pie only to head over to the kitchen and realize that I only had just TWO green apples. Oh man. The look on his face when I said I didn’t have enough apples made me feel SOOOOOO guilty.

So I was off to see if I could figure something out. Thankfully I always have a stash of frozen fruit in the fridge. I pulled out a triple berry mix and went to work and the results were AWESOME! Marriage saved by frozen fruit!

This is the kind of pie that I make for Thanksgiving or Christmas family gatherings along with one of these easy no bake pies.

Ingredients

  • pie crust
  • apples
  • frozen mixed berries
  • sour cream
  • eggs
  • butter

This pie uses an ingredient you don’t usually find in fruit pies- sour cream! It might sound a little weird but it results in an awesome pie filling.

I used my trusty ol’ pie crust recipe. Still haven’t found a pie crust recipe that is easier or more forgiving. I also used the crumble from that recipe for this as well.

Also, you can use a store bought or homemade pie crust for this. If you are in a hurry, the frozen pie crusts from the store work just fine but I have found they are slightly smaller in size than my homemade ones. Make sure you have an extra one on hand as you can always divide the filling between the two if that is the case.

Pantry staples

  • cinnamon
  • salt
  • sugar
  • brown sugar
  • flour
  • quick oats

You can use quick oats or regular rolled oats. I prefer the quick oats because it is a little less chewy but the choice is up to you.

How to make this

  1. Make your pie crust, oatmeal crumble, and preheat your oven.
  2. Line your pie tin with the pie crust.
  3. Then make the filling by mixing together the eggs, sour cream, and sugar before adding the dry ingredients.
  4. Add the fruits to the mix and pour the filling immediately into your prepared pie crust.
  5. Bake until the fruits are soft and the crumble crisp. If the pie crust starts to darken too quickly, cover with foil.

Top tips

If you want to make this as just an apple pie, swap the 3 cups of frozen fruit for 3 cups of sliced apples.

Other fruits would also work for this like peaches or nectarines.

You must make the crumble first, then the filling and once you put filling in the pie crust you need to bake it right away otherwise the filling will start to leak moisture and you end up with a soggy pie.

Top tips for cooking with kids

Whenever I bake with children younger than 8, I either pre-make my pie crust or buy one. Children that age have short attention spans and using short cuts makes everyone happier.

Ingredients

  • 1 9-inch pie crust (homemade or store bought)

Crumble topping:

  • 1/2 c quick oats
  • 1/2 c flour
  • 1/2 c butter
  • 1 c brown sugar
  • 1/4 tsp salt

Filling:

  • 2 eggs beaten
  • 1 cup sour cream
  • 1 cup sugar
  • 2 Tbsp flour
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 3 cups sliced green apples
  • 3 cups frozen triple berry mix

Instructions

  • Preheat the oven to 375 degrees F. Have your pie crust ready in the pie tin.
  • In a bowl, put quick oats, flour, brown sugar, and salt. Cut chilled butter into small cubes and add to the mix. Using a pastry blender, cut the butter into the oatmeal mixture until you have roughly pea-sized chunks. 
  • Then, combine beaten eggs, sour cream, and sugar in a large bowl. In a separate small bowl, combine flour, cinnamon, and salt. Add the flour mixture to the egg mixture and stir to combine.
  • Next, add apples and frozen berry mix to the wet mixture and stir to combine. Pour into your unbaked pie shell. Sprinkle crumble mix over apple berry filling.
  • Bake for 45-55 minutes. If edges and top begin to brown too quickly top with foil and continue baking. Allow to cool for at least 30 minutes before slicing.

Notes
