French toast casserole has a lot in common with a popular treat in countries like England and Ireland! Basically this is just the breakfast version of bread pudding. It’s bread soaked in an egg and milk mixture to turn leftover bread into something amazing.

If you want you can skip the icing, use strawberry sauce, apple syrup or buttermilk syrup for a more standard French toast breakfast. You could also dust with powdered sugar instead and serve with fresh fruit.

ingredients to make cinnamon roll french toast bake

Ingredients

  • brioche bread or french bread
  • eggs
  • milk
  • cinnamon
  • vanilla
  • brown sugar
  • flour
  • butter
  • powdered sugar

Although brioche can be a little more difficult to find it’s worth the effort. If you really can’t find brioche, Hawaiian sweet rolls are a good substitute.

You can use regular bread for this but you’ll want to use the exact same weight of bread. A white bread would work best to have the same flavor.

Tips & Tricks

  • You need to allow enough time for the bread to soak up the egg mixture. Although an overnight soak is best, allow the casserole to sit for at least 30 minutes before baking.
  • Have leftover bread like croissants or French bread? Use those instead!
  • Is your French toast bake softer (aka soggier) than you like? Bake it uncovered for a little bit longer until it’s the consistency that you want.

    1. I’ve never tried it but I don’t see why not. I would freeze it fully baked but without the icing on it. Reheat and then drizzle the icing on after.
