Fabulous Friday- Buttermilk Blueberry Breakfast Cake

Oh my was this cake good.  And although my hubby made fun of me when I told him I was making it I noticed it didn’t stop him from eating almost half the pan.  This is really really good folks. I like the fact that it’s not too sweet while still being sweet enough.  The buttermilk really adds that extra richness.  Really it’s like a big blueberry muffin just easier to make since you don’t have to scoop out individual portions.  Muffins and cupcakes may be more appealing to kids but sometimes I really loath scooping out the batter into pans.  I make a big fat mess when I do.  And cookies- same issue.  I much prefer to squish it all in the pan and cut them into cookie bars.  Half the prep time-same deliciousness.  Sometimes I just prefer to be lazy spend my time on other things like actually getting to spend time with my hubby and kids. So nix the muffins and make this every once in a while and you won’t regret it.
