One of my all time favorite desserts is ice cream. Ice cream and brownies…and maybe cookies. Anyways. Sometimes my hubby will go out with me to get ice cream on date night but ice cream is pretty low on his list and it is so expensive to buy just a cone. So making it at home makes it totally worth it for me so that I can snag some when I want some. This isn’t quite as unusual as my watermelon or cinnamon ice cream but it’s still not your standard vanilla or chocolate. Cake batter ice cream is always a hit with the kiddos as well. I’ve had great success with this recipe from CopyKat Recipes. I think the reason this one is so great is that the cake mix is added to a hot mix and then allowed to chill for several hours. It really allows the flavors to meld and doesn’t result in a grainy texture which I have had happen with other recipes.
