Well, fall appeared for as few days last week but as quickly fled California. We have warmed back up and are supposedly going to be hitting the 80’s & 90’s this weekend!! Seriously depressed! So I will continue to wish for colder weather and pretend it’s cold enough to wear pants and scarves while actually wearing super lightweight scarves and shorts.
To compensate for the not so fall weather we are having I like to pretend it is chilly outside and bake up some yummy treats. It makes the house hot but I don’t care. I made these pumpkin chocolate chip brownies last fall and they were a huge hit. I brought them for the class of teenagers we taught at church and word got around about them and I had adults and kids hunting me down to snag a slice. I made it home with an empty pan and a little disappointed I didn’t get to eat any of the leftovers. Just thinking- can they be considered leftovers if they have only been around for less than a day?
Anyways, they are super yummy and the only thing I changed was using 2 whole eggs instead of 2 egg whites which makes them a little more brownie like than the original recipe. The original is more muffin like and I prefer fudgy.
