Quick Italian Sausage Sandwich

This Quick Italian Sausage Sandwich is made with ground Italian sausage and cheesy Provolone for an easy dinner option that is ready in under 40 minutes.

Ground Italian sausage is an easy protein to start with for a quick dinner. You could also use it for Pumpkin Sausage Penne or Simple Sausage Pasta.

This filling is incredibly easy to prepare and is also easily prepared ahead of time, if needed. Reheat the filling before adding it to the bread and placing in the oven so the sandwich heats evenly.

We like to serve these with sweet potato fries or lemon pepper potato wedges and a side salad or fruit.

Ingredients

  • ground Italian sausage
  • garlic cloves
  • onion
  • red bell pepper
  • frozen spinach
  • french bread
  • Sliced provolone cheese
  • Parmesan cheese

Substitute

For the bread, you can substitute any soft loaf bread or even small rolls. Ciabatta or soft hoagie rolls can easily be substituted.

Spinach can also be swapped out for kale or arugula. If using something like arugula, add it very last and cook just until wilted.

If you don’t have ground Italian sausage, you can use plain pork sausage and make your own Italian seasoning which you can add while the ground sausage is cooking.

You could also use ground turkey instead of ground pork if you are in need of a lighter protein for the sandwiches.

How to make this:

  1. Preheat oven to 350 degrees F.
  2. Slice bread cutting into the loaf in a v-shape. If you like remove some of the bread to allow more room for the filling. Be careful to not rip into the outside of the loaf and leave a hole.
  3. Cook sausage breaking up large chunks until sausage is browned and there is no more pink showing. Remove meat but leave the sausage drippings in the pan.
  4. Add garlic, onion, and pepper to the pan with the sausage drippings. Saute until the veggies begin to soften, about 3-4 minutes. Add spinach and mix until spinach is broken up.
  5. Add sausage back to pan and stir to combine and reheat.
  6. Spoon the filling into the bread. Top with a sprinkling of Parmesan and slices of Provolone cheese.
  7. Cover with foil. Bake for 5-10 minutes until cheese is completely melted. Slice and serve.
Sausage, bell peppers, spinach, onion, and provolone cheese are baked together for a delicious hot sandwich.

This is different from the Stromboli sandwiches I have ever had- they were always made with Italian sausage, onions, green peppers, jalapeno peppers, marinara/pizza sauce, mozzarella cheese and mushrooms on a toasted bun- not sure what type of bread though. The one thing that i liked was when they used one big sausage patty- less messy, because it stayed together better. Never heard of using Spinach before either.

    1. I was definitely inspired by the stromboli sandwich but this is not your traditional stromboli. I’ve been making this for a long time and adding different veggies to make it a little lighter. You could definitely serve it with marinara sauce and jalapenos or pepperonchinis which sounds good to me. Using the ground sausage makes it a little easier for kids to eat and incorporates the veggies into the meat making them stand out less. Lots of little tricks for my kiddos.
