Slow Cooker Baked Apples with Cinnamon Ice Cream

Slow Cooker Baked Apples are a wonderful fall treat you can enjoy year round thanks to your slow cooker. It is extra delicious when paired with this easy cinnamon ice cream.

I originally saw this recipe many years ago in an All You magazine. I think this combo is great for our rather warm California winter. You get a little bit of warm with something nice and cold.

The cinnamon ice cream gives a nice blend with the baked apples. I also like the fact that the baked apples aren’t overly sweet so when paired with the ice cream its just right.

My favorite part thought is how it makes the house smell AMAZING! Better than lighting one of those fall candles is making up some of these baked apples. It is simply heavenly.

I recently made up a batch and am thinking about using the baked apples and syrup for a really yummy breakfast oatmeal. Baked Apple Oatmeal anyone?

Ingredients

Pantry staples

  • brown sugar
  • cinnamon
  • cloves
  • nutmeg
  • salt

What apples are best for baking?

You will want to use a good baking apple that will not fall apart when baked. A few of my favorites are Granny Smith, Jonagold, Honeycrisp and Pink Lady.

How to prep the apples

To prep the apples use a vegetable peeler to peel a strip off the top half. You don’t want to peel all the way down because otherwise the apples lose their structure, trust me I’ve done that before and it makes it kind of a hot mess, so just peel a bit off the top.

Now to core the apples you can do it a couple ways. I did it with a paring knife which works but is a bit rough and you will lose a bit of apple unnecessarily. My preference is to use the small side of a melon baller to get in there and get out the core and seeds.

You keep a lot more apple and your far less likely to lose a finger in the process, those fingers have value, ask an actuarian!

Cinnamon ice cream hack

You can make your own cinnamon ice cream either from scratch or using a nifty hack that I love. I don’t always have space in my freezer for my ice cream maker and also don’t always have the time. So I like to keep a thing of vanilla ice cream and hack a semi-homemade version.

It’s actually kind of similar to how I made the Pumpkin Pie Ice Cream Sundaes where you soften up the ice cream, mix something in, and then get it back in the freezer to harden. It’s a nifty little hack to keep in your back pocket!

Ingredients

Slow Cooker Baked Apples:

  • 4 medium cooking apples like Granny Smith
  • 3 Tablespoons unsalted butter cut into small pieces

Cider Syrup:

  • 1/2 cup brown sugar
  • 1 cup unsweetened apple cider
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt

Cinnamon Ice Cream:

  • 1 Tablespoon cinnamon
  • 1 quart vanilla ice cream store bought or homemade

Instructions

Slow Cooker Baked Apples

  • Peel a strip off the top of the apple and core the apples.  To core the apples use a small paring knife or a small melon baller.
  • To make cider syrup, combine brown sugar, apple cider, and spices in a small sauce pan.  Bring to a boil.  Reduce heat to low and allow to simmer for 5 minutes.
  • Place apples in slow cooker, adding a few pieces of butter to each apple cavity.  Pour cider syrup over the apples.
  • Cook the apples in the slow cooker over high heat for about 2-2 1/2 hours. Apples should be tender but still holding their shape.
  • Cool slightly.  Serve with cooking juices spooned over and along side cinnamon ice cream.

Cinnamon Ice Cream

  • If using store bought ice cream, soften the ice cream by leaving at room temperature for 20-30 minutes, until soft enough to mix.
  •  In a large mixing bowl, beat ice cream and cinnamon until thoroughly combined.  Return to freezer until solid, about 30 minutes.

Notes

For homemade ice cream, use your favorite vanilla ice cream recipe but add the cinnamon into the mix before pouring into your ice cream maker.  Make the ice cream according to the ice cream maker’s instructions.
