10 ouncesfrozen spinachthawed, drained, and chopped

4slicesProvolone cheese
1/4cupParmesan cheeseshredded
Instructions
Preheat oven to 350 degrees F.
Slice bread cutting into the loaf in a v-shape. If you like remove some of the bread to allow more room for the filling. Be careful to not rip into the outside of the loaf and leave a hole.
Cook sausage breaking up large chunks until sausage is browned and there is no more pink showing. Remove meat but leave the sausage drippings in the pan.
Add garlic, onion, and pepper to the pan with the sausage drippings. Saute until the veggies begin to soften, about 3-4 minutes. Add spinach to pan and stir until broken up and well mixed in.
Add sausage back to pan and stir to combine and reheat. Spoon the filling into the bread. Top with Parmesan cheese and Provolone cheese.
Cover with foil. Bake for 5-10 minutes until cheese is completely melted and slightly browned. Slice and serve warm.
Notes
For the bread, you can substitute any soft loaf bread or even small rolls. Ciabatta or soft hoagie rolls can easily be substituted.Spinach can also be swapped out for kale or arugula. If using something like arugula, add it very last and cook just until wilted.If you don't have ground Italian sausage, you can use plain pork sausage and make your own Italian seasoning which you can add while the ground sausage is cooking.You could also use ground turkey instead of ground pork if you are in need of a lighter protein for the sandwiches.
