Pumpkin Sausage Penne Pasta

  • 16 oz penne pasta

Sausage and Veggies

  • 1 Tbsp olive oil
  • 1 lb ground sausage
  • 1 green pepper diced
  • 1 red pepper diced
  • 1 onion diced
  • 3 garlic cloves minced
  • 1 Tbsp rosemary dried

Pumpkin Cream Sauce

  • 15 oz pumpkin puree
  • 1 cup almond milk or whole milk, half and half, or coconut milk
  • 1/2 cup Parmesan cheese grated


  • Cook pasta according to package directions.  When pasta is done, drain well.
  • Meanwhile, add olive oil and peppers, onion, rosemary, and garlic to a large pan over medium high heat.  As veggies begins to soften, about 2-3 minutes, add the sausage.  
  • Continue cooking until sausage is no longer pink and vegetables have softened about 4-5 minutes.
  • Add pumpkin puree, milk, and cheese.  Simmer sauce over medium-low heat until sauce is heated through about 3-4 minutes.  Season to taste with salt and pepper.
  • Add pasta to sauce and toss to coat.
