Sausage Cassoulet Recipe (Sausage and White Beans Casserole)

Simple to put together, Sausage Cassoulet is a classic French comfort food made with slow roasted sausages, tomatoes and white beans.

  • 3 Tbsp extra virgin olive oil
  • 2 1/2 lbs Italian Sausages cut into thirds
  • 3 pints cherry tomatoes
  • 1 large onion diced into chunks
  • 4 cloves garlic minced
  • 3 Tbsp Balsamic vinegar
  • 2 bay leaves
  • 1 tsp fresh thyme
  • 1 tsp fresh rosemary
  • 1 tsp kosher salt
  • 1/2 tsp black pepper freshly cracked
  • 48 ounces canned cannellini beans drained


  • Preheat oven to 425 degrees F.
  • In a roasting pan or large low sided cast iron pot, combine tomatoes, olive oil, onion, garlic, and spices together.  Arrange cut sausages over the tomato mixture.
  • Bake for 45 minutes until the tomatoes have burst and created a sauce and sausages are brown and cooked through.
  • Add beans and stir to combine.  Cook for an additional 5- 10 minutes until heated through.
  • Remove bay leaves before serving.  


Although this is very delicious on its own, we like to serve it over creamy polenta.
You can substitute Great Northern beansĀ  or any other white bean for the cannellini beans.
