Remove cinnamon rolls from packaging, reserving the icing for use later. Arrange the cinnamon rolls on an un-greased cookie sheet in a Christmas tree shape. Allow space between rolls to allow them to grow in the oven.
Bake at 400 degrees F for about 20 minutes. If edge rolls are beginning to brown too quickly, cover the whole thing with foil. Remove from the oven and allow it to cool.
Meanwhile, pour all of the icing from the packages into a small bowl. Add at least 5 drops food coloring, more if you want a deeper color.
Spread the icing over the cinnamon roll Christmas tree and then sprinkle with Christmas sprinkles.
