Oatmeal Cranberry Pancakes are a hearty, tart and sweet way to wake up on a fall morning with fresh cranberries and oatmeal in a breakfast classic.

Ingredients
  • 1 3/4 cups flour
  • 1 cup oatmeal
  • 2 Tbsp sugar
  • 1 Tbsp baking powder
  • 1/4 tsp salt
  • 1 egg beaten slightly
  • 1 1/2 cups milk
  • 3 Tbsp canola oil
  • 1 cup fresh cranberries or frozen
  • 1/4 cup sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
Instructions
  1. Combine dry ingredients in a large bowl.
  2. In a small bowl, toss cranberries with 1/4 cup sugar.  Add to dry mix.

  3. In a medium sized bowl combine wet ingredients. 

  4. Add wet ingredients to dry ingredients and mix until combined. Lumps are okay.
  5. Cook on a hot griddle until done, about 2 minutes per side.
