One Pot Jamaican Jerk Chicken

An easy one pot chicken dinner of oven roasted Jamaican Jerk chicken cooked on top of diced plantains, sweet potatoes, and apples.

Ingredients

  • 2 lbs chicken breasts cut into 6 servings
  • 2 Tbsp Jamaican Jerk seasoning
  • 1 sweet potato diced
  • 3 plantains diced
  • 2 apples diced
  • 1 red onion diced
  • 2 garlic cloves minced
  • 2 Tbsp olive oil extra virgin
  • 1 1/2 tsp kosher salt
  • 1/2 tsp pepper

Instructions

  • Preheat oven to 450 degrees F.
  • Place diced sweet potatoes, plantains, apples, onion, and garlic in dutch oven.  Drizzle olive oil over the mixture.  Season with salt and pepper and toss to coat.
  • Season each chicken breast with 1/2 tsp of Jamaican Jerk seasoning on each side.  Place chicken in dutch oven over the vegetable mix. 
  • Bake chicken and veggies for 30-35 minutes until chicken is cooked through and sweet potatoes are tender.
