Honey Lime Salmon
I happen to love seafood and I realize that not everyone does. One reason I love seafood so much is how fast it cooks up. It is perfect for the nights when I feel so overwhelmed and know I need to get dinner on the table fast. If seafood is on sale at the store you know I will be picking some up.
This honey lime salmon is really simple to prepare and you probably have everything you need in your pantry or fridge already. It looks gorgeous and the flavors are fantastic but it is a pretty fool proof dish. I made it in the same way I made my Easy Asian Salmon In Foil.
Cooking the fish in foil means that clean up is minimal which after a long busy day the last thing I really want to do is spend a ton of time scrubbing dishes. I paired the salmon with some Orange Scented Quinoa, sugar snap peas, and peaches for a really light and refreshing dinner.
Ingredients
- 2 lbs salmon
- Juice of 2 limes
- Zest of 2 limes
- 1/4 cup honey
- 1 tsp kosher salt
- 1/2 tsp ground pepper
Instructions
- Line a cookie sheet with foil large enough to wrap around the salmon. Place salmon in middle of foil.
- Combine lime juice, zest, honey, salt and pepper in a small bowl. Pour over salmon. Fold foil over the salmon and fold over edges of foil to create a packet.
- Bake in a 375 degree oven for 15-20 minutes depending on the thickness of the salmon. Test the salmon by using a fork to see if the thickest part of the salmon easily comes apart and flakes.
