Korean BBQ Inspired Burger
This incredible easy Korean BBQ Inspired Burger is packed full of flavor with a grilled burger topped with Korean style coleslaw for an easy summertime dinner recipe.

If you have never had Korean BBQ you are seriously missing out. It’s sweet and savory and super rich and pretty much it’s amazing. I grew up in an area with a large Korean population and Korean BBQ restaurants were a popular spot to visit. I even remember one high school fundraiser put on where we had Korean BBQ and Korean dancing. I can’t imagine a better fundraiser!
We’ve made slow cooker Korean BBQ short ribs before but it’s always nice to swap things out every now again. My favorite part is that it doesn’t take long to put together because there are so few elements. Serve this with some tangy lemon pepper oven fries or plain fries and sriracha fry sauce.
Ingredients you need
- hamburger buns
- beef hamburgers
- mayo
- sriracha
- rice vinegar
- soy sauce
- sugar
- lemon juice
- sesame oil
- sesame seeds
- ground ginger
- minced garlic
- salt
- black pepper
- coleslaw mix
I used this recipe for Korean Coleslaw from My Korean Kitchen as the basis for my coleslaw but since my kids are not huge on spicy foods I left out the Korean red pepper. The bag of coleslaw replaced all of her main salad ingredients.
My kids also chose not to use the sriracha mayo but they still loved the burgers. Don’t be afraid to just put stuff out there and let them pick and choose. Plain mayo would also be a good addition if a dry bun is an obstacle.
How to make this
- In a bowl, combine marinade ingredients together. Place burgers in a container where they can sit and marinate like a casserole dish or large bowl.
- Allow burgers to marinate at least 15 minutes. Preheat grill to high heat. Grill burgers for 3-4 minutes per side for medium burgers.
- Lightly toast hamburger buns.
- Meanwhile, combine slaw dressing ingredients in a large bowl. Add coleslaw mix to the dressing and toss to coat. Set aside.
- In a small bowl, combine mayo with sriracha until well blended. Spread 2 Tbsp siracha mayo over top and bottom buns.
- Add Korean BBQ burger and top with a generous amount of the Korean style coleslaw.

Tips and tricks
Top tips for cooking with kids
To help picky eaters, you want to build positive relations with foods before they even try to eat it. Playing with (yes playing with!) or helping with cooking are ways to help build that positive feelings.
Youngest children can help dump everything in bowls and mix. Encourage them to touch, smell, and lick individual ingredients. Ask them engaging questions like “what does it feel/smell/taste like?”

Cook times
Cooking times can vary greatly depending on what kind of grill you are using. To ensure your burgers are cooked through use a meat thermometer to check for doneness. You want the burgers to reach an internal temperature of 145°F (for medium rare) to 160°F (for medium).
My favorite is the Thermoworks Thermapen but the Thermopop is a good lower priced option.
Can I make the coleslaw ahead of time?
I would not recommend making the Korean style coleslaw ahead of time. It will keep for maybe 2-3 days but is definitely best the day of.

- 2 Tbsp rice vinegar

I love heat in my foods and absolutely enjoyed this spicy burger! I actually added more spice and made with lettuce and it was so delish!

What a flavor packed burger!! I think, even as a kid, I would have devoured this burger. And I was a picky eater. The sauce maybe not as a kid, but definitely now! I couldn’t tolerate the heat when I was younger but love it now.
