Meatball Sub French Bread Pizza
Turn the classic meatball sub into a Meatball Sub French Bread Pizza for a quick 30 minute dinner to feed a crowd that is sure to please the kids.
One of our family’s favorite dinners is meatball subs. One of the other ones is pizza. So when we were trying to head out of town one weekend my husband suggested meatball subs for dinner. Sweet easy enough! But we were also toying with having everyone eat in the car on the road so we could hit the road an hour sooner. Not going to happen with meatball subs. So I decided to make it into a meatball sub french bread pizza and it was a huge hit.
I used a mix of mozzarella and Parmesan to mimic the flavors we usually use in our meatball subs and then I sprinkled some dried basil and oregano over the top. I sometimes like to top my meatball subs with spinach and sliced bell peppers so I’m thinking of doing that the next time I make this. You really could top the pizza with whatever you would usually put on a meatball sub.
I might start making double the amount of meatballs when I make subs just so I can make pizza with the leftover meatballs and sauce. I like to keep my homemade turkey meatballs in stock in the freezer for easy meals but for this particular time I used frozen turkey meatballs I picked up from Costco. The plain frozen turkey meatballs are really nice because you can use them in a variety of dishes like Sweet and Sour Meatballs but they also work just as well for Meatball Pizza. We also really like the Frozen Italian Meatballs that’s also available at Costco but I wouldn’t use those for Sweet and Sour Meatballs. We did once and it was a bit weird.
