Okay, I have to say that this recipe is easy but time consuming and perhaps a little frivolous. There are way easier jello recipes out there. And yet, this is one of the biggest hits each year with the kids. It is a Thanksgiving staple at my in laws and my kids could not stop talking about it this year. My daughter even wrote a thank you note and picture to her aunt for making the rainbow jello! I think she is pretty stinking cute 🙂
This dish could be one of those holiday staples that everyone anticipates and everyone remembers. And I know some people might think all those jello flavors might taste weird mixed together (I’m with you folks) but it doesn’t. They blend really well together and I have to say that I was excited to get sent home with the extra pan of jello. I certainly ate my fair share. And my kids chose to eat the jello over leftover pie almost every day for a week!
Kids love the layers of rainbow colored jello made with 6 different flavors of jello sandwiched between layers of creamy jello.
For a 9x13 glass pan and a 7x9 glass pan
- 6 flavors of Jell-o, 2 small boxes of each flavor for 12 boxes
- 4 cups sour cream
For two 9x13 pans
- 7 flavors of Jello, 2 small boxes of each flavor for a total of 14 boxes
- 5 cups sour cream
- 8 oz. tub Cool Whip, optional, for topping
- Empty 1 small box of Jello into a small glass bowl. Boil 1 cup water and pour into jello. Stir until well dissolved.
- For 1st layer, add 2/3 cup sour cream and whisk until well blended.
- Pour mixture into both glass pans and chill in refrigerator until set.
- For next layer, repeat with the same flavor but do not add the sour cream. Instead, add 1/3 cup cold water. Pour onto chilled layer and refrigerate until set.
- Continue repeating layers- one with sour cream then one without until each flavor is used. If desired top with Cool Whip.
