Oven Roasted Garlic and Herb Potatoes

Oven roasted garlic and herb potatoes are an easy side dish recipe that bakes in the oven at the same time as other foods making it ideal for busy people.

Being able to cook everything together at once makes dinner time prep so much easier. It is easy to adjust the cooking temperature and time of the potatoes so that they can be cooked alongside whatever else is cooking in the oven like meatloaf, chicken, ham, rolls or a loaf of bread!

Plus, I love making up a big pan or two of this and then using the leftovers for breakfast burritos or breakfast hash. Prepping once to eat twice makes life so much easier.

Ingredients needed to make this:

  • 3-5 lbs potatoes, diced
  • 1/4 cup olive oil
  • 1/2 Tbsp garlic powder
  • 1/2 Tbsp kosher salt
  • 1 tsp black pepper
  • 1 tsp dried rosemary
  • 1 tsp dried basil
  • 1/2 tsp dried thyme

If you would like, you can add sliced onions and minced garlic to the mix while roasting. 

What other vegetables can I add to roasting potatoes?

You can even swap out some of the potatoes or add to them other root vegetables like carrots, sweet potatoes, parsnips, or butternut squash. 

The process is the same, just adjust the amount of seasonings if you are adding more vegetables while keeping the amount of potatoes the same.

It is also easy to add halved brussel sprouts or trimmed green beans to cook on the same sheet pan. It’s a handy time saver.

How to make oven roasted potatoes

  1. Preheat oven to 450 degrees F.
  2. Combine spices in a small bowl. In a large bowl, toss the diced potatoes with olive oil and spices.
  3. Spread potatoes on a greased cookie sheet.
  4. Bake for 25-30 minutes, stirring halfway through.

Tips and Tricks

If you are not going to cook cut potatoes right away, keep them in a bowl of water completely covered to prevent them from turning gray.

What temperature do you roast potatoes at?

The nice thing about cooking potatoes is that you can achieve the same results using a variety of temperatures. You can decrease the oven temperature and increase the cooking time in order to cook other recipes at the same time.

My rule is for each 25 degree decrease in oven temperature increase the cooking time by 5-10 minutes. Here’s the breakdown.

Bake potatoes at:

  • 425 degrees F for 30-35 minutes
  • 375 degrees for 35-40 minutes
  • 350 degrees for 45-50 minutes

Can you roast potatoes at the same time as other foods?

If you are cooking multiple recipes at the same time, it is usually a good idea to increase the cooking temperature by 15-25 degrees because having multiple items in the oven reduces it’s efficiency in cooking. 

If you choose not to increase the temperature be aware that cooking times will be longer.
