Gingersnap and Eggnong Ice Cream Sandwiches are full of holiday flavor and so easy to make!

Well it has finally turned chilly here in Southern California. It’s been a warm fall and I was starting to lose all hope for a cold winter. It’s still too early to tell but I’m keeping my fingers crossed it will at least stay slightly chilly for the rest of the year. With that said, it’s never too cold in my house for cold desserts, especially ice cream! If you haven’t noticed by the recent trend in recipes- Vanilla Pudding Pie, Mini Pumpkin Cheesecakes, Pumpkin Ice Cream Sundaes– if it’s chilled my family will eat it!

I’ve learned that unless we are living somewhere really cold and the house doesn’t warm up when I’m baking that it’s generally warm enough for cold treats. So if you are living somewhere warm or just want to try something a little different make sure to add these to your list! And take advantage of all the cool holiday flavors and buy the 2 ingredients you need for these!
