Brownie mixes are a perfect starting point to making some crazy amazing brownies. There are just so many great things you can do with them.

Plus they are a great starting point when cooking with small children. A boxed mix reduces the need for a lot of ingredients and they make for a quick start to a delicious treat.

Even older children can easily learn how to doctor a boxed mix to make a wonderful treat to surprise friends and family.

brownie batter, marshmallow fluff, graham crackers, and chocolate chunks on a cutting board

Ingredients

  • brownie mix or brownies from scratch
  • jar of marshmallow fluff
  • chocolate chips
  • graham crackers

Substitutions

I found marshmallow fluff works better than regular marshmallows because it does not turn as hard once cooked and cooled. If you have marshmallows on hand you can make your own marshmallow fluff.

You can replace the graham crackers with golden grahams which would be equally delicious and simpler if you don’t want to deal with the mess of breaking up a bunch of graham crackers.

If the brownie mix you are using already has chocolate chips in them, like the Ghiradelli brand, omit the additional chocolate chips called for in this recipe.

How to make this

  1. Prepare the brownies according to package or recipe directions
  2. Fold in the chocolate chips and graham crackers.
  3. Pour half the batter into a greased 9 by 13 baking pan.
  4. Spread the marshmallow fluff over the batter. Top with the rest of the batter.
  5. Bake at 350 degrees F until the center of the brownies is done, about 25-35 minutes. Cool before serving.

Top Tips

Spreading marshmallow fluff can get very sticky. Spray your spatula with some cooking spray which will help it not stick so much.

Tips for cooking with kids

This is a great easy recipe to make with kids of all ages. They can help with the crushing, mixing, and pouring.

Use this time to practice some basic bath skills. Have children break up the graham crackers by hand. You can have them work on fractions as they break up the graham cracker. How many pieces can they break them into?
