5 Ingredient Green Chicken Chili

When you are in need of a quick and healthy dinner to warm you up, try this 5 ingredient, 30 minute Green Chicken Chili. Keep it simple and top with cilantro or cool it down with some sour cream.

This soup is my kind of comfort food- healthy and packed with flavor without a lot of effort. Taking just a few ingredients you have something that will warm you up on even the coldest nights.

It’s simple and hearty with chicken, white beans, and tomatoes but also not something that will leave you feeling heavy. You can treat this similar to a red beef chili and top it with some tortilla chips and a dollop of sour cream.

I’ll often make some simple cheese tortillas or sweet potato honey cornbread muffins to serve with this since I know that my younger children won’t eat as much soup. Having something else on hand that I know they will eat makes it so that they won’t go to bed hungry and there is less complaining at dinner time.

Ingredients

If you aren’t a huge fan of spicy, you can tone down the amount of heat by choosing a mild green salsa to use. Also, if you are up for it, you can make your own salsa verde! Make a double batch to save some for later.

You can use any white bean for this but my favorite is cannellini beans. However, use what you can easily get access to.

Although, I used cherry tomatoes you can use regular tomatoes and chop them up. Or you could go with heirloom tomatoes or heirloom cherry tomatoes. Don’t be afraid to mix it up and use what you have!

Also, if you need to save even more time, you could use rotisserie chicken meat instead of cooking up the chicken thighs and it will be just as tasty.

How to make this in the slow cooker

Here are instructions if you would like to make this in the slow cooker.

  1. Add the uncooked chicken thighs, salsa verde, and chicken broth to the slow cooker. Cook on low for 4-5 hours or on high for 2-3 hours.
  2. Then add the white beans and wait 10-15 minutes before serving to allow the beans to warm.
  3. Top with the tomatoes and cilantro. Serve immediately.

Tips for cooking with kids

This is a really easy recipe kids can make by themselves with minimal oversight. If you have older kids who have a little experience in the kitchen give them a chance to show you what they have learned.

For younger kids, this is an opportunity to practice some motor skills like cutting the cilantro with scissors and opening the cans of beans with a can opener.

Ingredients

  • 1 Tablespoon olive oil
  • 16 ounces chicken thighs cut into ½ inch pieces
  • 2 15 ounce cans of white beans rinsed and drained
  • 15 ounces chicken broth about 2 cups
  • 1 16 ounce jar of salsa verde mild or medium (about 1¾ cups)
  • ¼ cup chopped cilantro
  • 2 cups cherry tomatoes cut into quarters

Instructions

  • Heat a Dutch oven or large pot over medium-high heat. Add olive oil and then the chicken. Cook until chicken is no longer pink, about 3-5 minutes.
  • Then, lower the heat to medium-low heat and add the beans, salsa, and chicken broth. Simmer for 5 minutes to blend the flavors.
  • Remove from heat. Add tomatoes and cilantro and serve hot.
