Enjoy the flavors of butterscotch and cream soda all summer long with this Harry Potter inspired butterbeer ice cream float made with 4 simple ingredients.

Poor Harry really could have used a few of these butterbeer ice cream floats the summer before his 3rd year at Hogwarts! Thankfully these are super simple to make and enjoy whenever it’s hot outside.

If you love root beer floats these are their butterscotch cousin made with cream soda instead of root beer! I love root beer floats but my husband has always been rather ho-hum about them. He was super happy about this version!

This is perfect to make for a Harry Potter themed party or for your favorite Potterhead. Making them this treat and giving them a Harry Potter kitchen gift might make you their new favorite!

Ingredients you need:

  • Vanilla ice cream
  • Cream soda
  • Butterscotch syrup
  • Whipped cream

It’s really easy to customize the amount of butterscotch flavor you want. If you love a butterscotch packed ice cream float add a little bit with each step.

Can I use different ice cream for this?

I used vanilla ice cream because it’s something most of us probably have already in our freezer but feel free to substitute butterscotch ice cream for the vanilla!

How To Make Butterbeer Ice Cream Float:

  1. Add scoops of vanilla ice cream to each cup.
  2. Slowly pour cream soda over the ice cream.
  3. Drizzle butterscotch syrup over the ice cream and soda mixture.
  4. Pipe whipped cream over the top of the ice cream and soda.
  5. Add extra butterscotch syrup, if desired.
  6. Serve immediately!

Tips for scooping ice cream

It helps to leave the ice cream out for about 5 minutes before attempting to scoop. If it’s extremely hot out it might take less time.

Another good trick is to have a cup full of really hot water that you dip the ice cream scoop in before each time you scoop.

Ingredients

  • 4 cups vanilla ice cream
  • 3 cups Cream soda
  • 1/4 cup whipped cream
  • 1/2 cup butterscotch syrup additional to taste

Instructions

  • Add 2 scoops of vanilla ice cream to each cup.
  • Slowly pour cream 3/4 cup of cream soda over the ice cream in each cup. (If you want more butterscotch flavor you can add a little more butterscotch syrup here).
  • Drizzle 1 Tbsp of butterscotch syrup over the ice cream and soda mixture.
  • Pipe whipped cream over the top of the ice cream and soda.
  • Add an extra 1 Tbsp butterscotch syrup.

Notes
