I love really simple recipes like this one. Other than cooking the pasta it’s a one pot dish with simple ingredients I basically always have on hand.
Choosing to pair the pumpkin with a cream sauce is a match made in heaven. The flavors are rich without being heavy by choosing to sub traditional heavy cream with almond milk and adding a hearty dose of Parmesan cheese.
Adding sausage and veggies to the pasta helps to round out the meal and make it more substantial than just the pasta and pumpkin cream sauce would be.
How to make pumpkin penne with sausage?
- To make the sauce start by sauteing the veggies in a little bit of olive oil.
- Then add the sausage and start breaking it up. I love this handy tool.
- Once the sausage is cooked, add the pumpkin, milk, and Parmesan cheese and heat through.
