Simple Sourdough Pizzas top sourdough bread with your favorite pizza toppings. It cooks quickly and is the perfect solution for a busy weeknight pizza craving.

Simple Sourdough Pizza

Does anyone else have major pizza cravings?  I swear I want pizza at least once a week.  Like the good old classic BBQ Chicken Pizza or my personal favorites Buffalo Chicken Pizza and Meatball Pizza.   But there is the downside to pizza cravings- you either need to order out or make it at home, which takes time and an oven.  When it’s warm out I don’t want to heat up the oven and warm up the kitchen even more.  And even when I don’t mind heating up the oven I don’t always want to take the time or even have the time to make it.

Simple Sourdough Pizzas

Enter these Sourdough Pizzas!  When I was a kid I remember every kid’s cookbook had a recipe for English muffin pizzas and this is basically the same thing you just get more surface area for pizza toppings!  Yum!  These are perfect to make with the kiddos.  My kids made their own cheese and pepperoni pizzas while my hubby and I went for pesto and riccota pizzas.  You can make these on the grill if you have one or in the toaster oven like we did!

Simple Sourdough Pizzas

Simple Sourdough Pizzas

Ingredients

  • 4 slices Sourdough bread
  • 3/4 cups Pesto
  • 3/4 cups Ricotta cheese
  • 8-10 Cherry tomatoes , halved
  • Basil
  • Olive oil
  • Salt and Pepper

Instructions

  • On a slice of sourdough bread spread 2-3 Tbsp pesto. Spread 2-3 Tbsp ricotta cheese over the pesto.
  • Top with 4 cherry tomato halves and pieces of basil. Drizzle with a little bit of olive oil and season with salt and pepper.
  • Toast in a toaster oven for 5-10 minutes depending on the strength of your toaster oven. Or place under a broiler for about 2 minutes.
