Easy Homemade BBQ Chicken Pizza
Don’t toss that leftover chicken– use it for this BBQ Chicken Pizza that is an easy recipe for kids to make. Use your favorite BBQ sauce and top with red onions and cilantro for a “fancy” pizza at home.
I’m pretty sure whenever I’m meal planning I immediately go to pizza for dinner. I like BBQ chicken pizza but with only chicken and BBQ sauce it’s not usually my go to. It’s just kind of ho-hum. But it doesn’t have to be.
I’ve found that adding a few ingredients really spices things up! I think what really does it for me is the different textures on my pizza. I like having a little crunch and the onions give that texture difference. The cilantro helps give a little savory contrast to the really sweet BBQ sauce.
If you still have lots of shredded chicken lying around try making Buffalo Chicken Pizza, Chicken Bacon Ranch Pizza, or you can check out this post with lots of ideas on ways to use shredded chicken.
Ingredients
- Pizza dough
- BBQ sauce
- Shredded chicken
- Mozzarella cheese
- Red onion
- Cilantro
You can make your own pizza dough or buy some from the store. My favorite dough to make for a busy day is this 30 minute pizza dough. Sometimes you can even buy dough from your favorite pizza place.
Using a rotisserie chicken for recipes like this really helps to cut down on the prep work and time.
Substitutions:
Don’t like cilantro? Don’t worry!
Now I know not every loves cilantro. My mom thinks it tastes soapy so if you’re in that camp you could try topping with some fresh basil or oregano.
Other topping ideas:
- crispy bacon
- pineapple
- pepperoncini peppers
- try using a mix of cheeses like gouda, cheddar, or provolone
How to make this:
- Spread BBQ sauce over the the pizza round.
- Top with shredded chicken and then the cheese.
- Scatter red onion over the top and top with cilantro.
- Bake for 10-15 minutes in a 425 degree F oven until cheese is bubbly and crust is golden brown.
- Top with more chopped cilantro.
TOP TIPS FOR COOKING WITH KIDS
Kids can help with prepping the ingredients whether it’s cutting up cilantro or shredding mozzarella. Young children can use kid scissors to cut the cilantro while older children can practice their knife skills.
They also love to help with rolling out the pizza dough! You can even give them their own pizza dough to roll out and they can top their pizza however they want.

That is funny about the cilantro, my daughter thought it was parsley, needless to say she didn’t love it. It doesn’t freshen your breath quite the same. LOL I am pretty sure you can give any pizza restaurant a run for their money! Thanks for sharing.
I love fresh cilantro, but it took me a while to develop that affinity. When I was younger it reminded me of soap — weird. Now, I can’t get enough. I’d love a slice of that pie, as well!
I read an article a while ago that was saying genetics is what caused some people to experience a “soapy” taste with cilantro. Weird huh! My mom hates it but I love it. Thankfully it’s such an easy topping to switch out and use basil, oregano or garlic or even some freshly grated lemon!
