In college I worked at a pizza place on campus for 3 years. I remember coming home from work at night and sitting on the couch with my roommates and chatting at 2am and rubbing my eyes only to realize that my face was completely covered with a light dusting of flour. It still makes me smile every time I make pizza.
The coolest part of working at a pizza place was finally learning how to toss pizza dough! I always got kind of giddy as I’d stand there tossing the dough in the air. I’m pretty sure that makes me a culinary nerd or something like that.
So I like to put those hard earned skills to work making pizzas at home. And although my kids are still dead set on cheese and pepperoni I like to make the specialty pizzas for me and the hubby. What’s silly is I usually just pull from our leftovers to make these “specialty” pizzas. But who cares?
And although the pictures show chunks of chicken we added shredded chicken later and using shredded chicken is SOOO much better. So don’t do what I did! Haha.
And don’t be afraid to make pizza at home. If making the dough scares you just call your local pizza place and see if you can buy some dough rounds from them. It will make your pizzas taste so much better than the store bought dough stuff. Just saying!
I honestly usually forget to get the dough going early enough so I end up busting out my trusty old Better Homes and Gardens The Red Cook Book (affiliate link) for their pizza dough recipe which doesn’t require a long resting period. I make sure when I’m stretching out the dough that I don’t make the crust too thin and I like to let it sit for 5 minutes before I stick it in the oven. It lets the dough rise just a tad and makes it not so dense.
Buffalo Chicken Pizza
- 1/4 cup melted butter
- 1/4 cup Frank's Red Hot Sauce
- 1 cup shredded chicken
- 1 cup Mozzarella cheese
- One large pizza dough
- Green onions for topping
- Combine melted butter and Frank's Red Hot Sauce in a small bowl. Spread however much sauce you need to cover the pizza leaving a inch border around the edges.
- Top with shredded chicken and mozzarella cheese.
- Bake in 450F oven for 15-20 minutes until pizza is cooked through and edges are crisp.
- Top with green onions.
Note- Allow pizza to cool for a couple minutes before cutting and you'll have less cheese and toppings sliding off when you pull slices away.
