Easy Blackberry Waffles Recipe

Blackberry waffles are filled with mashed blackberries for a sweet breakfast treat when topped with whipped cream and fruit syrup.

These are similar to my double blackberry pancakes and you can adjust the recipe easily enough to make them with raspberries or with strawberries. And they are really good with buttermilk syrup!

What kind of meals does your family like for breakfast?

Ingredients you’ll need:

  • flour
  • sugar
  • baking powder
  • salt
  • eggs
  • almond milk
  • coconut oil
  • vanilla
  • blackberries

If you would like, you may substitute coconut milk or regular milk for the almond milk. You can also substitute canola oil or melted butter for the coconut oil.

Tip: make sure the coconut oil is very warm when adding to the milk otherwise the coconut oil will solidify. You can also warm the milk slightly which will help prevent the coconut oil from becoming chunky.

How to make blackberry waffles:

  • In a medium sized bowl, combine the flour, sugar, baking powder, and salt. Make a well in the center and set aside.
  • In another bowl, combine the eggs, almond milk, coconut oil, and vanilla, and mashed blackberries. Add egg mixture all at once to flour mixture and stir just until moistened but the batter will still be lumpy.
  • Pour batter on preheated and greased waffle maker. Cook according to waffle maker’s directions.
