Don’t toss that leftover chicken- use it for BBQ Chicken Pizza. Use your favorite BBQ sauce and top with red onions and cilantro for a “fancy” pizza at home.
I’m pretty sure whenever I’m meal planning I immediately go to pizza for dinner. I mean pizza is so versatile- hello CPK! If you hadn’t guessed by all the variations I’ve got up already I am always thinking of creating, it’s pretty close to my all time favorite foods.
I like BBQ chicken pizza but with only chicken and BBQ sauce it’s not usually my go to. It’s just kind of ho-hum. But it doesn’t have to be. I’ve found that adding a few ingredients really spices things up! I think what really does it for me is the different textures on my pizza. I like having a little crunch and the onions give that texture difference. The cilantro helps give a little savory contrast to the really sweet BBQ sauce.
Now I know not every loves cilantro. My mom thinks it tastes nasty so if you’re in that camp you could try topping with some fresh basil or oregano. I think crispy bacon would be another great topping and really need to try that next time I make BBQ chicken pizza. No need to order take out when you can make it at home.

- 1 large pizza round
- 1 cup BBQ sauce
- 1 cup shredded chicken
- 1 cup mozzarella cheese or monterey jack cheese blend
- ¼ red onion, sliced
- 2 Tbsp cilantro, chopped
- Spread BBQ sauce over the the pizza round. Top with shredded chicken and then the cheese.
- Scatter red onion over the top and top with cilantro.
- Bake for 10-15 minutes in a 450 degree oven.
